Easy Dinner Recipe 1: Salsa Avocado Chicken with Pace® Salsa

Straight from Texas,Pace®has been a long-time staple in my home. I can remember as a kid enjoying chips andPace®Picante and Salsa. And Taco Night doesn’t really exist without it, right?

This baked chicken recipe featuresPace®as the star of the show, and the bold kick of flavor takes all the guess work out of dinner. Baked along with fresh avocado and melty cheese over chicken, salsa makes this meal shine.

Ingredients Need to Make Salsa Avocado Chicken:

  • 2 pounds chicken breast cutlets boneless, skinless
  • 1 tablespoon taco seasoning
  • 2 avocados
  • squeeze lime or lemon juice
  • 1 small pinch salt
  • 1 small pinch black pepper
  • 24 ouncesPace®Chunky Salsa or otherPace® variety
  • 1 ½ cups Monterey Jack cheese shredded
  • 1 tablespoon chives chopped

How to Make Salsa Avocado Chicken:

  1. First, preheat oven to 375 degrees. Lightly spray a baking dish with non-stick spray. Spoon ½ cup ofPace®Salsa on the bottom of the dish and set aside.
  2. Next, sprinkle the chicken cutlets on both sides with taco seasoning. Arrange the chicken on top of the salsa.
  3. In a small bowl, mash the avocado with the lime juice, salt, and pepper using a fork. Then spread the avocado mixture evenly over the chicken.
  4. Pour the remaining salsa on top, spreading evenly to cover.
  5. Bake uncovered for 30 minutes. Remove from the oven, sprinkle the shredded cheese on top. Return to the oven for 5 minutes.
  6. When the cheese is bubbly, remove from the oven. Sprinkle with chives and serve.

My favorite part about this easy chicken recipe is how the avocado combines with the salsa while it bakes. It is mouthwatering, and this makes a filling meal when served with black beans or over cooked rice.

Ingredients Needed to Make Basil Tomato Shrimp Pasta:

  • 16 ounces penne pasta dry, uncooked
  • 2 tablespoons olive oil
  • 1 zucchini halved lengthwise, sliced
  • 12 ounces shrimp uncooked, peeled, deveined, tail off
  • 24 ouncesPrego®Garden Harvest Chunky Tomato Sauce or otherPrego® variety
  • ½ cup basil leaves fresh, loosely packed, rough chopped
  • ½ cup Parmesan cheese shredded, plus additional for serving

How to Make Basil Tomato Shrimp Pasta:

  1. First, prepare penne pasta in boiling water to package directions for al dente. Drain (do NOT rinse), set aside.
  2. Next, in a large skillet, heat the olive oil over medium-high. Sauté the sliced zucchini until crisp tender, about 5 minutes.
  3. Then, stir in the uncooked shrimp. Cook and stir frequently until the shrimp is pink. This will take about 5 minutes (more or less depending on the size of the shrimp).
  4. Reduce heat to low and carefully pour in thePrego®Garden Harvest Chunky Tomato Sauce sauce. Stir and simmer for 5 minutes.
  5. Add the fresh, chopped basil and ½ cup of Parmesan cheese.
  6. Fold in the prepared penne pasta and heat through.
  7. Serve immediately with more Parmesan cheese if desired.
